The extraction rate is the amount of water that a dehumidifier removes from the air.  It is measured at certain temperature and relative humidity (RH %) parameters.

Air always contains a certain amount of water, in the form of water vapour.  This amount of water is commonly known as humidity.  A air warms up more moisture can be held, so the level of moisture is relative to the temperature.
